Granola Bars
This granola bar is a family favourite in our home. I love it because you can modify the ingredients to your taste. You can add coconut, switch out the dried fruit or seeds, add nuts (as long as it is not going to school). If you don’t want to add the Rice Krispies or Puffed Quinoa, you will need to increase the oats by at least 1/2 cup. It makes 40 good size granola bars and more if you want them to be smaller. They are not overly sweet (around 6g of sugar per bar), they are perfect for school lunches (when they don’t have any nuts) and they freeze really well!!!
Ingredients
2 cups Rolled Oats (I do a mix of quick & large)
1 cup Rice Krispies
1 cup Puffed Quinoa
1/2 cup sunflower seeds
1/2 cup pumpkin seeds
1/2 cup raisins
1/2 cup cranraisins
1 cup chocolate chips
1 can sweetened condensed milk
1/2 cup butter, melted
I also add
1 TBSP Epicure’s Cocoa Crunch Whole Food Sprinkles
1 Scoop Epicure’s Optimum Vegan Protein Blend
**optional – 1 cup nuts of your choice, coarsely chopped**
Directions
Preheat oven to 350
Line a large sheet pan (15X10) with Parchment paper
Combine all dry ingredients in a large bowl
Add in wet ingredients and mix well
Press firmly onto prepared sheet pan
Bake in preheated over for 25-30 minutes or until golden brown
Remove from oven and cool slightly
Cut into bars while still warm
Store in closed container or freezer
