Beef & Barley Stew

There is nothing better than enjoying a warm stew, full of good stuff. 
This Beef & Barley stew is one of my favourites and we enjoy it a couple of times a month.
I also love that I can make a big batch and freeze it for another date!

Beef & Barley Stew

INGREDIENTS
2 lbs diced stewing beef
1 tsp Epicure Minced Garlic
1 TBSP Epicure 3 Onion Dip Mix
2 Large Carrots, roughly chopped
2 celery sticks, roughly chopped
4 cups Epicure Beef Broth, prepared
1 Can of Dark Beer of your choice (or 2 cups of Beef Broth)
1/3 cup quick cooking barley
6 Medium potatoes, quartered
Salt & Pepper, to taste

DIRECTIONS
Place all ingredients into a slow cooker.
Cook on low for 6-8 hours or on high for 3-4 hours

I also like to add a handful of sweet pea in the last 30 minutes of cooking.
This allows for the peas to keep their crunch!
